I like to bake. In my family, my husband is the cook and I’m the baker. Usually it’s cookies, sometimes it’s brownies, occasionally cupcakes. But cakes? Those are rare. Usually only for the girls’ birthday parties, and with so much other party prep going on around then, baking a cake from scratch is the last thing on my mind. So I turn to my trusty old box of cake mix. But this year, I discovered a quick and easy boxed cake mix hack that takes a regular ole mix and turns it into a cake that’s super moist and super delicious. Once you try this hack, you’ll never go back just a regular box of mix again!
First, you’ll need to gather your ingredients: cake mix, water, oil, eggs, and a box of pudding mix (in a flavor that best matches your cake flavor).
Traditionally, boxed mixes call for two eggs and about a 1/2 cup of oil. For our hack, we’re going to add one extra egg as well as an extra 1/3 cup of oil to what the instructions call for. So for this cake, I ended up using three eggs and 1/2 + 1/3 cups oil.
Then, add as much water as the package calls for and your pudding mix. Mix it all together and bake as instructed by the package.
Voilá! You now have a super yummy and moist cake that tastes like it came from a fancy bakery instead of your local grocery store! Just frost or decorate as desired and serve.
It’s such a simple way to bring a boxed mix to the next level, and it’s so easy you’ll never have an excuse not to do it!
