Spaghetti with Shrimp, Olive Oil, Garlic, and Chili Flakes
  • 7ounces whole grain spaghetti
  • 3 small cloves garlic, minced
  • 1 1/2tsp chili pepper flakes
  • 4tbsp Extra Virgin Olive Oil
  • 3/4tsp salt
  • 8ounces cooked shrimp
  • 2 large tomatoes, skinned and peeled
  • 1/2tsp freshly ground black pepper
  • Handful of baby spinach leaves
  • Freshly grated Parmesan
  1. Cook spaghetti according to the directions on the package, until it is al dente.
  2. Strain spaghetti and return to the saucepan over a low heat.
  3. Add the minced garlic, chili pepper flakes, olive oil, prawns, tomatoes, salt, and pepper, and mix together well. Place in a serving dish and scatter over the spinach and Parmesan cheese.
  4. Serve warm in bowls!
Recipe Notes

– Chili pepper flakes can be omitted if you don’t want the spice.

– I like to use the salad shrimp for this recipe just because that’s how my dad always did it. But you can use any size you prefer.
