Spaghetti with Shrimp, Olive Oil, Garlic, and Chili Flakes

While my mom was the primary cook in our house growing up, every once in a while, my dad would hit the kitchen and whip up dinner for our family. Sometimes I hated it (liver, yuck!) but often times that meant one of his signature dishes that I loved, like Spaghetti with Shrimp, Olive Oil, and Garlic. Light and flavorful, it was always a crowd pleaser (and the only way I would eat shrimp).

Now, as the mother of a small child who hates pretty much any kind of pasta sauce, this recipe has made it into rotation around our dinner table too. And everyone loves it!

Spaghetti with Shrimp, Olive Oil, Garlic, and Chili Flakes

Ingredients
  • 7 ounces whole grain spaghetti
  • 3 small cloves garlic, minced
  • 1 1/2 tsp chili pepper flakes
  • 4 tbsp Extra Virgin Olive Oil
  • 3/4 tsp salt
  • 8 ounces cooked shrimp
  • 2 large tomatoes, skinned and peeled
  • 1/2 tsp freshly ground black pepper
  • Handful of baby spinach leaves
  • Freshly grated Parmesan

  • 7 ounces whole grain spaghetti
  • 3 small cloves garlic, minced
  • 1 1/2 tsp chili pepper flakes
  • 4 tbsp Extra Virgin Olive Oil
  • 3/4 tsp salt
  • 8 ounces cooked shrimp
  • 2 large tomatoes, skinned and peeled
  • 1/2 tsp freshly ground black pepper
  • Handful of baby spinach leaves
  • Freshly grated Parmesan
Instructions
  1. Cook spaghetti according to the directions on the package, until it is al dente.
  2. Strain spaghetti and return to the saucepan over a low heat.
  3. Add the minced garlic, chili pepper flakes, olive oil, prawns, tomatoes, salt, and pepper, and mix together well. Place in a serving dish and scatter over the spinach and Parmesan cheese.
  4. Serve warm in bowls!
Recipe Notes

- Chili pepper flakes can be omitted if you don’t want the spice.

- I like to use the salad shrimp for this recipe just because that’s how my dad always did it. But you can use any size you prefer.
