Ingredients
  • 32oz chicken broth
  • 1/2cup milk
  • 2-3 potatoes
  • 2 carrots
  • 14.5oz can diced tomatoes, undrained
  • 4oz can diced green chilies
  • shredded cheese
Instructions
  1. Peel and dice potatoes and carrots in to bite-sized pieces
  2. Add potatoes, carrots, tomatoes, chilies, broth, and milk to a large pot and bring to a boil
  3. Once boiling, reduce heat and simmer for 20-25 minutes, or until potatoes are cooked through
  4. Ladle into bowls and top with shredded cheese.
  5. Allow cheese to melt and then enjoy!
